Don't worry. You can't see them, but the game is keeping track of all of your completed quests. At exactly 7 days (for either kind of quest), the button will change color and allow you to click to collect 1 or 2 FC. If you're not close to the amount of completed quests needed yet, don't worry about it. I expect they'll have this fixed by tomorrow - if it doesn't fix itself after Midnight tonight (in CA, where they are).
