All proper mozzarella is made with buffalo milk, one assumes you milk them like a cow???

Never heard of milking a Buffalo. I know there are ranchers here in Eastern Colorado that raise them for their meat. There is a company building a meat packing plant in a small town east of where I live that will process Buffalo. We have a number of huge dairy's that supply Lepernio with Cow's milk, that they make Mozzarella from. Having seen these critters (Buffalo) up close I'm just not sure they would stand for being milked.

Close - except it is water buffalo milk that is used - not that THAT would make them any easier to milk.

I was looking for a Add Me list. I looked around for one and couldn't find it. Is there such a critter?
